Memories, Always And Forever. For Tango.

Dearest Tango, 

There are some things right now truthfully that I am pretty sure I would be just fine forgetting. The fact that you always pee on the wall no matter how many times we told you not to. That you always step and sleep on your poop. That you always jump on me, leaving lines of scratches on my hands and legs.

But there are so many more things about you that I want to remember. I know these memories are slipping through the cracks of the hectic everyday life so much faster than I can gather them back in the silence of the night.

I want to remember you jumping excitedly on the barrier to reach us on the first day we visited you at the shelter. 

I want to remember the way you trembled in my embrace as we took you home on that sunny Friday morning. 

I want to remember the intimidated look on your face as Pepper stares at your coming home.

I want to remember you sprawl on the floor playing with your toys. Oh well, boys and toys never separated be it stuffed balls or bone treats.

I want to remember you stay still without flinching, when we brush your hair, put a hat on you or make fun of you. You simply want to make us smile.

I want to remember you barking as if asking us not to leave the house when we are going out.

I want to remember you enjoy snuggling up close to me as we watch a movie.

I want to remember you wait for me to finish the house chores before bringing you out.

I want to remember you look so thin and fragile after cutting your hair short to get rid of tangles, fleas and ticks.

I want to remember you were both excited and shaking at the same time on your first night out to a pups' party.

I want to remember you just stood still at one position when you are placed on a stool or table. 

I want to remember how much you love your big sister, although she always stomps all over you leaving you stinky in her saliva.

I want to remember your 'smile' and funny antics that never fail to make us laugh.

I want to remember you sleep like a human baby, so sound and peaceful. But your ears are mostly on alert mode. 

I want to remember all these. Because as much as you love us, I want you to know and remember that I love you too, little boy.

Memories, Always And Forever. For Pepper.

Dearest Pepper,

Sometimes it takes me noticing the fan-like fur on the bridge of your nose where your eyes are shyly veiled, to realise how fast you are growing. I could bet that I could see your round eyeballs so clearly just last week!

There will be a time coming, maybe not so soon, that you are going to demand more of my time while friends, family and work consume most of me. So I'm going to try to remember everything I can from this time now, because I want to remember to give you the most slice of my time, always, if possible.

I want to remember you burying your face in your bowl of breakfast, while chomping down like a real lady.

I want to remember you want me to feed you on those days when you woke up on the wrong side of the bed.

I want to remember you lying on your belly enjoying the view out the balcony.

I want to remember you love standing in front of the table fan or wind from the balcony and let your ears fly away. As if the wind blows your worries away.

I want to remember the look on your face when you wore your first Elizabethan collar.

I want to remember you growl at dogs who are double or triple your size and bark at them as if inviting them to play.

I want to remember even the slightly painful things: like the scratches I got from tripping over your leash and rolling on the pathway.

I want to remember singing you "Jesus loves me this I know" and you dance with me as I hum.

I want to remember how you love Froggy, the home-slippers. Like every child, you still need your soft toys.

I want to remember how you jump onto the bed and make my thigh or calf your pillow.

I want to remember you are the first sunshine I see in the morning.

I want to remember you whine in the middle of those nights when you are not allowed into the bedroom because you are in heat.

I want to remember you scurry to hide at the sound of thunder and firecrackers.

I want to remember how you plead with your 'hand' to carry you onto my lap whenever I'm in front of the computer.

I want to remember how protective you are of your little brother. You always bark at daddy when he scolds Tango for misbehaving. You are a good big sister, despite you always make him wet and stinky with your saliva after playtime.

I want to remember how your ears always rise at the words of "grandma's place" and how you get all ready to go when you hear "let's go!"

And I want to remember that you always stay close to us when we visit Grand's, fearing we'd leave you behind.

I know that all these things will change, one day. And I especially want to remember you are always there waiting at the door, without fail, when we come home. Unless you have slipped into the toilet, hiding.

Chocolate Walnut Muffins

If you haven't already know, I love anything chocolate especially those with a hint of bitterness. But I don't like those super-sweet and super-rich chocs such as milk chocolate.

After successfully baking the banana chocolate chip muffins, the hubster requested for chocolate muffins. So armed with a new open and excitement (I'm not sure if it's passion just yet) to bake up my sleeves, I looked up allrecipes.com again and modified the chocolate muffin recipe according to the ingredients I used for banana chocolate chip muffins. The only changes were replacing mashed banana with cocoa powder and walnut.

I'm an amateur home-baker, but I think people who have taken culinary classes would be proud of my creativity.

Check out the simple recipe for 14 muffins:
1 1/4 cups all-purpose flour
1/2 cup sugar
1/3 cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1 egg
1/4 cup olive oil (replacing applesauce)
1/2 cup low-fat milk
1 teaspoon vanilla extract
1/2 chopped walnuts
1/4 cup semisweet chocolate chips

Directions:
  • Combine flour, cocoa powder, sugar, baking powder, baking soda and salt. Set aside.
  • Combine egg, oil, milk and vanilla extract.
  • Stir into dry ingredients just until moistened.
  • Fill paper-lined muffin cups or muffin pan two-thirds full.
  • Sprinkle chocolate chips and walnuts.
  • Bake at 250 degrees for 20 minutes or until a cake-tester comes out clean.
  • Cool for 5 minutes before removing from pan to wire racks.

In a haste, I bought the foiled muffin pan, thinking it could be reused.

After soaking, washing and leaving it to dry for 2 days, the hubster noticed some foam and water was trapped in between the sheet of plastic and foil. Hence, I came home to a lovely surprise last evening.

He bought me a non-stick muffin pan :) that makes me a happy wife.

So I'm looking forward to this weekend, and wondering what muffin to bake. By the way, the footnotes say one muffin equals 119 calories, 2g fat (0 saturated fat), 171mg sodium, 23g carbohydrate, 0 fiber, 4g protein.

I've been enjoying 2 muffins for lunch for the past 3 days, and my daily calorie consumption is about 950kcal per day which is lower than my metabolic rate, which also means I might be losing some weight by the end of the week! Eating what I love and not gaining the extra kilos - that's what every girl dream of. So now you can too *wink*
